White Chocolate Parfait with Kahlua
This is a special occasion recipe for those not concerned about cholesterol.
Ingredients

50 | | g | caster sugar |
120 | | g | good quality white chocolate |
300 | | ml | cream |
3 | | | egg yolks |
80 | | ml | Kahlua |
Method
Place sugar and 60 ml water in a pan over medium heat and boil for 4 minutes. Chop the chocolate by hand, then process in a food processor until finely chopped. Add sugar water and egg yolks, and process until smooth. In a separate bowl, lightly whip the cream, then fold into the chocolate mixture. Divide into 4 freezer-proof serving dishes, leaving room for the topping.
Freeze for two hours and remove from the freezer 30 minutes prior to serving. Add 30 ml of Kahlua on each dish when serving.
