Squid with Tomato and Wine
Ingredients

250 | | g | squid rings |
10 | | ml | olive oil |
½ | | g | onion |
5 | | ml | minced garlic |
30 | | ml | tomato paste |
30 | | ml | red wine |
10 | | ml | paprika |
5 | | ml | black pepper |
5 | | ml | salt |
15 | | ml | parsley |
Method
Chop the onion and parsley. Heat the olive oil in a frying pan and gently fry the onions, garlic and squid for about five minutes. Add the tomato paste, wine, parsley, paprika, salt and pepper and 100 ml of water. Boil briefly and simmer for 10 minutes until the sauce thickens. Serve on rice or pasta and garnish with parsley.
Note: Prawns or octopus can be substituted for squid.
