Parmesan Polenta
This simple side dish accompanies Mediterranean meals as an alternative to bread of pasta.

Ingredients

ggrated Parmesan cheese

Method
Butter a baking dish and put in the freezer. Heat the water in butter in a saucepan. When boiling, turn down the heat and stir in the polenta. Continue to stir occasionally ensuring the mixture doesn't stick to the bottom of the saucepan. After about 20 minutes, turn off the heat, add two thirds of the cheese and stir this into the mixture. Pour this onto the baking dish, spread to an even thickness and sprinkle with the remaining cheese.

Bake at 180°C for 30 minutes, then let it stand for another 15 minutes.
