Chocolate Mousse Cake
Not using flour, this cake has a consistency in between that of a conventional cake and chocolate mousse.

Ingredients
300
gdark cooking chocolate (75% cocoa)
100
gbutter
6
eggs
100
gcastor sugar

Method
Melt the chocolate in a double boiler and add the butter. Separate the eggs, add the sugar to the yolks and beat both vigorously. Remove the chocolate from the heat and add it to the egg yolks/sugar mix. Fold half the egg whites into the mix, then fold in the remaining egg whites. Put into a greased pan and cook at 180° for 20 minutes.
