Chocolate Mousse
This is a relatively straightforward dessert that can be prepared in about 20 minutes. It does, however, require good quality chocolate and patience. Resist the temptation (you can submit to it when you've finished) to increase the heat when melting the chocolate.
Ingredients

60 | | g | dark cooking chocolate (75% cocoa) |
15 | | ml | milk |
15 | | g | unsalted butter |
2 | | | eggs |
15 | | ml | castor sugar |
Method
Separate the eggs and beat both. Add the castor sugar to the egg whites and continue to beat them vigorously. Put the egg whites in the fridge.
Break the chocolate into small pieces, put into a bowl with the milk and butter and melt slowly by putting the bowl on a saucepan of simmering water. This will take about six minutes. Remove the chocolate from the heat, let it cool as much as possible without setting, add the egg yolks and mix. Then fold in the egg whites, taking care to retain the bubbles. Put into serving dishes and refrigerate.
